#1. Trim your fish, so you don't have the connective tissue like you see in the upper right part of the picture. Cut up the scraps for poke or something else.

#2. Use a hot heat source to quickly do the surface - like a blowtorch because it's no-touch. Do not use on a grill. Look at the huge amount of damage to the flesh from the grill. Tuna is almost all protein and will immediately stick to a grill.

#3. Cooked tuna does not taste as good as raw. Cooking is only to ensure that the squeamish feel better about eating it. Cooked tuna = canned tuna. Raw tuna = intense red-meat flavor, gentle fresh ocean essence, silky texture.

#4. Rest your meat so that it firms up and the fats/collagen are reabsorbed back into the meat

#5. Use a long, very sharp knife. His knife appears dull due to the damage done at the cuts.

#6. Use a single confident cut toward you. You can see in the second piece that he sawed at the meat.

#6. Portion consistently. What's up with the first three slices. There is like 600% difference is slice sizes.

#7. If you're going to fan your tuna slices, don't damage them doing. That looks like crap.

today my older one and I are driving north from DC back home to NY. we are going to stop in Baltimore for steamed crabs for lunch, but just the regular hard shell variety.

Cal helped end Tyler Shough's time at Oregon at the end of 2020. He transferred to Texas Tech and will be entering his final super senior year with the Red Raiders. He is also marrying his Oregon sweetheart Jordan Wormdahl next spring. It might be weird to think of a college senior getting married, but one has to remember that he's only about a year younger than Justin Herbert, who will be entering his fourth year in the NFL. Shough will be 24 this fall.

Cal's current version of blue - Berkeley Blue (CMYK 100|71|10|47) - is unique. It has also changed several times over the years. It used to be a much lighter blue. And then it was a darker blue under the Gilbertson era.

The word is that Nike's isn't investing a lot into Cal in Year 1. Some low-risk/plain vanilla uniforms that borrow heavily from the work that UA did - but the University owns. As evidence, the media clips for the basketball team show the C with the walking bear inside it and the Sather Stripe. The shoes were stock, so don't hold your breath for shoes in CMYK 100/71/10/47.

I did attend a September Cal Michigan game in Ann Arbor back in the day. Two memories of mine are: low 80s temperatures the day before the game, hi 30s the day of the game. We had only summer clothing having just come from Nassau (see below). Also, the Michigan cheer team picked up Oski by all four limbs and crotch rammed him (her?) into the goal post.

Also attended @Florida, and @Army in that same season. This was thanks to an Eastern Airlines “fly all you want for 21 days for $400” offer. No wonder they’re no longer in business.
