I'll send a selfie if I'm texting someone to wish them a happy birthday, but we haven't talked in awhile, because that saves the awkwardness of them having to ask who it is if I'm no longer in their phone. Of course, it feels very vain to send a selfie, so it's usually me making a strange face.

I think that was the rationale. They shared the space and when the zoo became part of an elephant species survival program they wanted enough room for the elephants to move more freely in a larger space.

need some help/advice

was going to make a beef stir fry w/ the sirloin i bought. but whenever i do it, the beef gets a little tough pretty quickly. any tips on how to make it soft and juicy like take out Chinese places?

cook it very slowly with a lot of juices first in Wok. remove meat, turn up heat in pan, stir fry everything else, dump meat back in for a min at the end to keep hot.

I've read put baking soda on the beef for maybe 30 min before stir frying. Try something like this: https://thewoksoflife.com/how-to-velvet-chicken-stir-fry/

I have a mongolian beef recipe that uses both some oil and corn starch in the marinade and "deep fry" over low heat. Then stir fry over high heat. Similar to the double fry method for making fries.

Looking at his recipe, when I freehand the seasoning I wonder if I'm putting too much wine and liquid. I probably put in more wine than he does. Maybe I should pour out the extra marinade before stir frying.

Also my wok is round bottomed and needs a wok ring and also has two D handles instead of a long handle. Makes it hard to toss things while stir frying and get wok-hay. My mom gave it to me when I went to Cal because they got a new stovetop with a glass top and solid Euro style elements so they couldn't use it. It's probably 50+ years old.

When the kitchen is remodeled I want to convert to gas with a large wok burner. I really want to be able to make chow fun with high heat to get the smokey flavor.

flank or skirt steak. and cooking on high heat (pre-heat the wok before adding oil, then ingredients) so the food cooks quickly.

Apropos: I bought two spray bottles to experiment while cooking. I have filled one with Korean plum vinegar. My family complained of inconsistency in acid (eg, lemon, lime, vinegar) when sprinkling it on by hand. I'm hoping that the spray will make application more consistent. You have now inspired me to fill the other bottle with water + 5% sugar + 1% baking soda to see if I can make a Maillard-reaction bottle.

After being lukewarm on it whence it first dropped on Netflix, I just finished The Kominsky Method...now that it has 3 seasons out, I gave it a go and totally enjoyed it, a rather pleasant surprise...22 episodes over 3 seasons, 30 mins apiece...a much older looking Michael Douglas is solid as an aging, 70-something y.o. failed actor that has made a career as an acting teacher in Hollywood. Great cast/cameos, and equal parts funny, touching and maybe a little sad...but if you like Douglas and Alan Arkin, you'd probably enjoy. Very Curb Your Enthusiasm-y, but with a more likable lead.

Mrs Slug got a test today in spite of being vaccinated because of two weeks of symptoms.

I have not had any symptoms and neither does Double D who is living at home.

If Mrs Slug's test comes back positive, I will likely be on forced quarantine for two weeks.

Lakers scrap in second half, but fall short of fairytale comeback

What a fitting ending to such a silly season for the Los Angeles Lakers. After trailing by as much as 29 points in the first half, the Lakers clawed their way back in the second half only to lose to the Phoenix Suns, 113-100, and get eliminated from the NBA Playoffs.

To be fair to the Lakers, expectations couldn’t have been lower for Thursday’s game. Just two days prior, the Suns convincingly beat the Lakers 115-85 with Anthony Davis sidelined. And while Davis technically made his return on Thursday, it was brief.

From the moment that Davis stepped out onto the floor, it was clear that he wasn’t ready to play. He was able to jog gingerly up-and-down the court, but he couldn’t do much beyond that. After five minutes, his night was over.

Who schedules the game times? The Dodgers and the Cardinals played Wed night. Cardinals had a game on Thurs in STL but the Dodgers had a travel day to ATL. Normally I would think the get away games are day games but this one was a night game. Joe Davis said STL would get in around 5 AM. They ended up losing to the Reds.

Just wondering if the Dodgers didn't schedule a day game or the MLB. I assume it's the teams since each team can choose if Sat is a day (most MLB) or night (Dodgers always start at 6 unless it's a Fox game).

I think the home team does. I don't know the details but the latest CBA has something about games times. Depending on how far the travel is you can't start a getaway day game after a certain time. It does seem strange to have a night game before having to travel half way across the country.

I guess the Dodgers didn't care since they have a travel day. And it did start at 610 not 710 so I guess that was in line with the CBA since STL didn't have to go to the east coast.

Did a quick review of the CBA and I think this is the section that still applies.

For the 2018 championship season, the latest possible start time

for getaway games on days when the visiting Club travels to a home

off-day or either Club travels to another game the following day shall

be determined by taking the portion of the in-flight time that exceeds

21/2 hours, and subtracting that amount of time from 7 P.M. However,

the foregoing sentence shall not apply to getaway games that are
