I got to experience cacao processed by a Maya family that owns a cacao farm in Belize. It is pretty awesome to experience chocolate the way it was first experienced by humans. Not that it stops me from eating chocolate in all its many forms, but it was eye opening to see how much the manner in which we consume chocolate has changed from its original form.
Hmmm....I don't have a link for ya, but it was akin to a tasting where you try the seeds in various forms, including the husk that surrounds the cacao seeds. Ultimately, the seeds are ground on a volcanic stone and turned into a beautiful past. This paste is then added to hot water and drunk out of a gourd. Voila, original hot chocolate. The experience also included the first spices added to the cacao water introduced by Spaniards. If you are ever in a country where there is an authentic cacao tasting, I highly recommend it. Mine was in San Ignacio, Belize and was amazing.
