I use the traditional recipe, but also helps that I have a large copper pot.
Pork butt cut into chunks and fried in lard for 45 minutes, with a quartered orange, onion, garlic, cinnamon stick, and cloves. Once it’s done frying, I add 1 can of sweetened condensed milk and a bottle of Mexican coke, and finish the braise until fork tender, usually another hour or so.
I’ve made carnitas many other ways (slow cooker, low temp braise, etc) but this is my favorite.
About 4 or 5 years ago, I thought I got a bargain at Urban Ore on a copper oval pot with 2 handles and a lid. I picked it up for $20 because it was scratched on the outside (looks like someone used steel wool on it) and some of the tinning on the inside was gone. I took it to a place near MLK and Adeline (I can't remember the name of the business). It cost me about $220 to have it redone, but Mrs Slug has used it several times since. And I definitely would have paid $300 or more if the pot had been new.
Used a pork butt to make homemade linguica sausages for Big Game and my Portuguese mother-in-law. Very simple recipe that was very well-received. Madeira wine made the big difference in flavor, and there was enough fat in the butt that I didn't have to add more fatback in order to keep it juicy.
I was thinking about making pulled pork this weekend. Maybe this is the sign I needed to pull the half-butt out of the freezer so it will thaw in time.
i like to roast it in the Big Green Egg for 3 hours or so. not super long, but long enough to cook thru and still stay very juicy and tender like a good steak.
it is an underrated meat, i think, in terms of flavor. and given how cheap it is compared to everything else, a downright bargain.
I use the Chevy's recipe. Not great, not bad. I haven't spent at lot of time at it, but I haven't found any other one that looks great. Maybe someone has a suggestion.
I've been struggling with pork shoulder. I turns out fine because it's a forgiving cut, but it's never been great. I think my problem - for once - is not thinking about what I need to achieve and how.
The shoulder is a big cut. I want to reach an internal temp of 180 (pork shreds at 180, but dumps a ton of water at 190). My previous attempts were either too cold (sous vide) or too hot (instant pot is 240 degrees or oven). And my cuts were either too small (cubed, so it didn't shred right) or too big (kept whole, so outside was overcooked and the inside undercooked). I think my next try is take a shoulder, cut with the grain into smaller cuts, so that the 180 temperature is throughout. I think I either need to sous vide at 180 or to invest in a wireless thermometer.
I make carnitas a couple times per year. I usually season it with salt, pepper, oregano, onion powder, garlic powder, and cumin. I add that into a Dutch oven with a couple quartered oranges, a couple quartered limes, and a quartered onion. 6-8 hours later I remove the pork, shred it with a fork, and get it lightly crisp either by putting the shredded pork in the oven for a few minutes or by briefly cooking it in a lightly oiled cast iron skillet. It usually comes out good and makes the house smell wonderful all day.
maybe a slice of pizza at the local place would be a good idea. or if i decide to drive 10 min i can get some amazing Sicilian style for a locally well known place.

Poll shows Independent Dan Osborn is in a statistical tie by being two points ahead of decade-long incumbent Senator Deb Fischer (R-NE). The Democrats have not fielded a candidate to challenge because it is a can't-win state, so they are considering endorsing Osborn. Osborn is a mix of blue collar labor policies, some libertarian social views that weirdly tend to be both on DEM and GOP sides because politics is a flat circle.
Ukrainian President Zelensky cancels his meeting with US lawmakers, apparently after GOP senators walked out of the meeting. Reportedly, the GOP Senate has whipped enough support to tying the Ukraine support to US border and immigration policy & funding. This is leading to a showdown where the GOP will vote against any funding of Ukraine, the DEMs want them to vote it down because of the backlash that it created last time. Meanwhile, we turn our back on another ally in an actual shooting war because of internal US political fuckery.
Prosecutors in the Georgia election subversion case against former President Donald Trump have officially listed former Vice President Mike Pence as one of the witnesses who could be called to testify at trial, according to multiple sources familiar with court documents that remain under seal.

President Joe Biden told Democratic donors Tuesday he wasn’t confident he’d be seeking another term if his predecessor Donald Trump wasn’t running for the White House, a notably candid assessment of his reelection rationale as he enters a likely rematch with his 2020 rival.

Corporations are already the fourth branch of government (not to be confused with the fourth estate). Consumers and he environment really need as much influence as they can get in the halls of Congress and the White House and the courts. There's almost never enough.
