I use the traditional recipe, but also helps that I have a large copper pot.
Pork butt cut into chunks and fried in lard for 45 minutes, with a quartered orange, onion, garlic, cinnamon stick, and cloves. Once it’s done frying, I add 1 can of sweetened condensed milk and a bottle of Mexican coke, and finish the braise until fork tender, usually another hour or so.
I’ve made carnitas many other ways (slow cooker, low temp braise, etc) but this is my favorite.
About 4 or 5 years ago, I thought I got a bargain at Urban Ore on a copper oval pot with 2 handles and a lid. I picked it up for $20 because it was scratched on the outside (looks like someone used steel wool on it) and some of the tinning on the inside was gone. I took it to a place near MLK and Adeline (I can't remember the name of the business). It cost me about $220 to have it redone, but Mrs Slug has used it several times since. And I definitely would have paid $300 or more if the pot had been new.
Used a pork butt to make homemade linguica sausages for Big Game and my Portuguese mother-in-law. Very simple recipe that was very well-received. Madeira wine made the big difference in flavor, and there was enough fat in the butt that I didn't have to add more fatback in order to keep it juicy.
i like to roast it in the Big Green Egg for 3 hours or so. not super long, but long enough to cook thru and still stay very juicy and tender like a good steak.
it is an underrated meat, i think, in terms of flavor. and given how cheap it is compared to everything else, a downright bargain.

The shoulder is a big cut. I want to reach an internal temp of 180 (pork shreds at 180, but dumps a ton of water at 190). My previous attempts were either too cold (sous vide) or too hot (instant pot is 240 degrees or oven). And my cuts were either too small (cubed, so it didn't shred right) or too big (kept whole, so outside was overcooked and the inside undercooked). I think my next try is take a shoulder, cut with the grain into smaller cuts, so that the 180 temperature is throughout. I think I either need to sous vide at 180 or to invest in a wireless thermometer.

It usually comes out good and makes the house smell wonderful all day.
