Porchetta. Not braised but probably the best use of pork belly

cut wide cross hatch cuts onto the meat side (i'm assuming this is a skin on pork belly). Combine chopped fresh rosemary, fresh sage, garlic, crushed fennel seed, chili flakes, orange and lemon zest, chopped fennel frond, and olive oil. Rub this mixture onto the belly, Make sure to get it into the cross cuts. Salt & pepper. Roll the belly up, skin side out and truss with butchers twine. Into the fridge for an hour or two, then place in a roasting pan with rack.

450F for 30 minutes, then turn the heat down to 325 and slow cook for another 2.5hrs.

Slice, serve on a toasted sandwich roll with arugula, and pickled red onions

Rather than one big chunk of belly, this is a bunch of ~1-2" slices of belly. Is it worth trying to adapt this recipe to slices?

it's about 10 miles away as the (glowing) crow flies. I did a project there once many years ago, they had an on-campus herd of deer which they wanted to cull, but couldn't, and a dog on contract to chase away the geese so they wouldn't full the drainage ponds with shit.

Earlier this morning I was looking at the weather forecast for where my sister lives in Iowa. The high for every day in the next week is in the single digits or below zero. And the low every day is below zero. I like cold and snow but I'll pass on her weather.

My wife and I were driving across the US during part of the pre-marriage part of our honeymoon. There was a gathering crowd in Boston outside a band half-shell (Hatch Memorial, I think). We asked someone what was going on and they said Cake was giving a free concert. So we set up camp on top of a statue pedestal, waited, and then listened to a kick-ass "Prolonging the Magic" concert with plenty of stuff from "Fashion Nugget"

He's not quite as good as he was last season (he got to pitch against a lot of bad teams) but as a second or third starter who will eat up innings - it's not terrible. Except for his off-the-field behavior.

I was hoping for more help at the end of the bullpen but maybe they'll make Uriais the permanent closer
